Why fried food?

Why we eat sufganiyot and latkes

Foods fried in oil remind us of the miracle of the oil that burned for eight days. Sufganiyot, jelly doughnuts, are the Israeli favorite. Latkes, potato pancakes, come from Eastern Europe. Moroccan families make sfinj, and many families also eat cheese foods in memory of Yehudit. See our Sephardic customs.

At home

Classic potato latkes

Ingredients, about 20 latkes

  • 2 pounds russet potatoes, peeled
  • 1 onion
  • 2 eggs
  • 3 tablespoons flour or matzah meal
  • 1 teaspoon salt and some pepper
  • Oil for frying

Method

  1. Grate the potatoes and onion, and squeeze out as much liquid as you can in a towel.
  2. Mix in the eggs, flour, salt and pepper.
  3. Heat a quarter inch of oil in a pan. Drop in spoonfuls and flatten.
  4. Fry 3 to 4 minutes a side until golden. Drain on paper towels.
  5. Serve hot with applesauce or sour cream.
Check your produce and ingredients. Use eggs checked for blood spots, and kosher-certified oil and flour.
